Jain Shahi Paneer

Jain Shahi Paneer is one of the easiest paneer dish I make for my kids whenever they demand for paneer, they just love to eat...I served them with Puri's, Wholewheat Ajwain Paratha , Wholewheat Roti | Phulka as it also goes very well with Naan, Roti & Rice.
What is Paneer ?
Paneer is one of the few types of cheese indigenous to the Indian subcontinent, and is widely used in Indian cuisine and even some Middle Eastern andSoutheast Asian cuisine. Unlike most cheeses in the world, the making of paneer does not involve rennet (which may be derived from animal, plant, fungal, and microbial sources) as the coagulation agent. Paneer is completely lacto-vegetarian and is a source of protein for Vegetarians. Firm tofu has a similar texture and consistency so it can be used in place of paneer as a non-dairy substitute.


How to make home made paneer:
For home made, softer paneer, I used 1/2 gallon of milk to 1/4 cup of vinegar, then in a medium pot, bring milk to boil, now slowly add vinegar to this milk while continuoulsly stirring, withing 5-10 seconds, milk should start to seperate from whey, now switch of the stove and let the pot sit for few mins. Take a colander and line it with cheese cloth or thin cotton cloth & place it over a large bowl, pour the above milk in this colander..Now very carefully take all the sides of cloth tie it & hang it for approximately 20 mins, bring it down and fold the cloth over smoothely across paneer. Now place a heavy weight on top for another 10 mins, open the cloth and cut paneer into desired shapes...


Cooking Time - 15-20 mins
Preparation /Marinate Time - 7 hrs
Serves - 4

Ingredients for Shahi Paneer:
250 gms Paneer (cottage cheese)
1 C Bell Pepper (cut in big pieces)

For Marination:
3/4 C beaten, Yogurt
1/2 tsp Garam masala
1/2 Red chilli powder
1/4 tsp Rasoi Magic Brand Shahi Paneer Masala (No Onion No Garlic)
1/4 tsp Amchoor (Dry Mango) Powder
A pinch Salt

For Gravy:
1/2 C Half-n-half or Whole Milk
15oz Tomato Sauce/Puree
1 Tbsp Cashew / Peanut Powder
1 " Chopped, Ginger (optional)
2 Chopped, Green chillies
1/4 tsp Cardamom powder
1-1/2 tsp Rasoi Magic Shahi Paneer Masala (No Onion No Garlic)
1 Tbsp Butter
1/4 tsp sugar taste
1 Tbsp Chopped Coriander / Cilantro
2 tsp Kasoori Methi
Salt to taste


Method:
1.Cut paneer into 2 inches lengthwise & marinate in spicy yogurt, adding all the ingredients mentioned in Marination & set aside for 6-7 hrs in fridge.
2. Heat some butter/oil,add ginger, green chilli, cashew/peanut powder, cardamom & bell-pepper fry for 4-5 minutes.
3. Add tomato sauce/puree and cook till oil starts seperating, now add marinated yogurt and cook for another 5 -7 minutes.
4. Add shahi paneer masala, once it starts to boil, add half-half, Kasoori Methi (rubbed between palms), sugar, salt to taste. OR you could also, before serving, heat gravy, add milk and paneer pieces and boil for 5 minutes.

Rangooni Vaal- High Fiber Low Fat Lima/Butter Beans Curry

Know What U Eat: A fiber all star- Lima / Butter Beans are a very good source of cholesterol-lowering fiber, as are most other legumes. In addition to it, the high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. When combined with whole grains such as rice, lima beans provide virtually fat-free high quality protein. You may already be familiar with beans' fiber and protein, but this is far from all lima beans have to offer. Butter beans are also used as sandwich spread, for those who are calorie concious . The curry made here with lima beans and tomatoes, can be done in Jain / non-jain version. Enjoy warm "Rangooni Vaal" with rice/roti.


Lima Beans


Ingredients:
1 C Lima/Butter Beans, soaked overnight & boiled
2 Tomatoes, chopped
1 Medium Onion (optional)
2 Cloves of Garlic (optional)
1/4 C Fresh Cilantro, chopped

For Tempering:
1 Tbsp Oil
1/4 tsp Mustard Seeds
1/4 tsp Cumin Seeds
A pinch of Asafoetida

Spices:
1/4 tsp Red chilli powder
1/4 tsp Turmeric
1/2 tsp Coriander-cumin powder
1/4 tsp Garam Masala
1 tsp Jaggery
Juice of half lemon/lime
Salt to taste


Method:
1.  Pressure cook/boil lima beans, adding some salt to it. Let it cool. Set aside.
2. Heat oil add mustard seeds, and let it splutter, once done, add cumin seeds & asafoetida.
3. Now add chopped tomatoes for Jain version / non Jain version, add onion and saute it untill translucent then add chopped garlic, and tomatoes and cook it for a while.
4. Add Lima beans and all the ingredients in spices, add water according to the consistency of gravy you want. Put it on simmer. Once done add chopped cilantro and serve with Roti /Rice.

Methi Papad Nu Shaak ( Fenugreek Seeds & Popadam Curry )

No vegetables, nor green leafy vegetables..not one for 8 straight days.. Yes I am talking about that time of year we just passed where we run out of recipes with no clue what to cook without using those daily food prepared with veggies..Jains celebrate "Paryushan" ( Pari + ushan = all kinds + to burn = to burn (shed) our all types of karmas )every year this very important festival in their community for self-purification and uplift by adhering to the 10 universal virtues in practical life. Know what you eat:Fenugreek seeds contain hormone precursors that can increase milk production in nursing mothers and it is widely used for insufficient lactation.
Because of the high mucilage content found in the fenugreek seeds it is considered a useful herb for diarrhea. The seeds husks absorb water resulting in bulkier stool.The seeds of Fenugreek contain choline which may be helpful for memory loss and to slow down the aging process. It has been used to treat bronchitis and asthma.,also considered a good herbal remedy for sore throat and coughs. It has also been used as an herb to promote hair growth both in women and men.
Fenugreek has been used for skin irritation, such as ulcers, boils, eczema, dandruff and cellulite.It is used to treat diabetes in adults, can be helpful as a herbal remedy to minimize the symptoms of menopause and it is thought to be helpful for painful PMS. Any reasons not to still eat this magic seed ??????

Cooking time: 10 mins
Serves: 3

Ingredients:
3 large moong dal papads
1/4 C green or yellow methi (fenugreek) seeds
1 tbsp. oil
1/4 tsp. each cumin & mustard seeds
1/2 tsp. red chilli powder
1/4 tsp. dhania powder
3-4 pinches turmeric
2 pinches asafoetida
Jaggery according to taste
salt to taste
2 C water


Method:
1. Boil or pressure cook fenugreek seeds with some salt in water, till soft to touch or 3 whistles.
2. Once cooked, drain the liquid, pour cold water and drain again. Keep aside. (this step is very important to get rid of all the bitterness in fenugreek)
3. Break papad into squares roughly. (keep big pieces)
4. Dissolve dry masalas, salt & jaggery in 1/2 cup water.
5. Heat a heavy pan, add oil, mustard, cumin seeds, allow to splutter, add masala water. Stir.
6. Add remaining water if you need more gravy, methi seeds, bring to a boil.
7. Add moong dal papad pieces, bring back to boil.
8. Cook on low, covered, for 3-4 minutes or till papad is soft.
9. Serve hot with chapati.

Lowfat Methi Na Muthiya Dhokla (A steamed Fenugreek leaves and chick-pea flour snack)


Know what you eat: In my earlier post of "Methi na gota" fenugreek leaves -gramflour fritters..I talked about the benefins of having fenugreek leaves/seeds for various purpose..JFI Apart from what we already know by now ...Fenugreek (Methi) is an amazing magic herb that can cure number of ailments. Indian Ayurvedic and traditional Chinese medicine recommend fenugreek to treat arthritis, asthma, bronchitis, improve digestion, maintain a healthy metabolism, increase libido and male potency, cure skin problems (wounds, rashes and boils), treat sore throat, and cure acid reflux. It also has a long history of use for the treatment of reproductive disorders, to induce labor, to treat hormonal disorders, to help with breast enlargement, and to reduce menstrual pain. Recent studies have shown that Fenugreek helps lower blood glucose and cholestrol levels, and may be an effective treatment for both type 1 and 2 diabetes,Since ancient times, it has been known to increase milk production in lactating women. Research has even shown that milk production can increase by over 500 percent within 24 to 72 hours after consuming fenugreek capsules. Channa Dal(Bengal gram) is very high in protein and very low in glycemic index.

Note: Another variation to this recipe is adding lauki/doodhi (bottle gourd) squash,cabbage, even leftover cooked rice...makes a big hit.......Here is the recipe.


Ingredients:

1 C Spinach washed, chopped
2 C Fenugreek Leaves washed, chopped
2 Tbsp Cilantro (Coriander) washed, & chopped
4 Tbsp Gram flour (besan)
2 Tbsp Whole wheat flour
1 Tbsp Semolina (rawa)
1 tsp Green chilli-ginger paste
1/2 tsp turmeric pwd
1/4 red chilli pwd (optional)
1/2 tsp Cumin seeds (jeera)
2 Tbsp Oil
1/4 tsp Soda-bi-carb
1/2 tsp Sugar
3 tsp lemon juice
Salt to taste



For Tempering:

1 Tbsp Oil
1 tsp Mustard Seeds
1/2 tsp Cumin Seeds
1 tsp Sesame Seeds
1 pinch asafoetida (hing) pwd


For Garnish:

1 Tbsp Chopped Coriander (Cilantro)
1 Tbsp Grated Fresh/Frozen-thawed Coconut


Method:


1. In a bowl, combine spinach & fenugreek leaves.


2. Sprinkle 1 tsp of salt, mix it well and squeeze out all the liquid (If you want to skip this process, make sure you do not add any water while kneading the dough, just mix greens with flour and set aside for a while, it will automatically leave some liquid which you can for the dough)


3. Combine everything mentioned in ingredients in a bowl & Knead into a semi soft dough (mix it thoroughly)


4. Wash your hands and now apply a little oil on your hands, divide the mixture and with your palms roll lenghtwise (as shown in pic) and place these rolls in a steamer.


5. Steam it for 15 - 20 mins or untill done, (as we check the cake, check this roll with a knife, if it comes out clean, that means its done).


6. Remove from the steamer and let it cool at room temperature for a while.


7. On a cutting board, take one roll & with a sharp knife, cut small circles (like we cut the cookie) as shown in picture. Like wise cut all the rolls and keep it aside.


8. Now for tempering, heat oil in a kadai/ skillet, add mustard seeds, as it spluters, add (jeera) cumin & sesame seeds. Add a pinch of asafoetida (hing).


9. Now add all the pieces which are cut and kept aside, slowly in this kadai/skillet, and let it become light brown or slightly cripsy on one side, similarly, with a spatula, very carefully turn it to the other side.


10. Once done, serve hot with Green cilantro chutney / ketchup enjoy these protein rich guilt free snack.

Plantain & Mixed Pepper Curry

Preparation time: 10 mins
Cooking time: 15 mins
Serves: 2-3 (side dish with Roti)


Ingredients:

2 C Plantain (cooking banana slightly riped), boiled, peeled
2 C Mixed Color Bell pepper (red, green, orange, yellow), diced
1 C Roasted Peanuts, roughly chopped
2 Tbsp Canola Oil
1/2 tsp Mustard seeds
1/2 tsp Sesame seeds
1/2 tsp Cumin seeds
1/4 tsp Fenugreek seeds
1/2 tsp Red chilli powder
1/2 tsp Turmeric Powder
1/2 tsp garam masala
1 tsp Coriander-cumin powder
Few pinches of Asafoetida powder
Chopped Coriander leaves, as you prefer
Salt to taste

Method:

1.  On a medium flame, heat oil, add mustard seeds, once it splutters add all the rest of the seeds, asafoetida, then add boiled diced plantain, cover lid to cook faster for a while..stir it as well.
2.  Now add diced peppers and peanuts, and add all the seasonings..red chilli, turmeric, coriander-cumin, garam masala, salt, stir well..cook for a while but do not over cook.
3.  Garnish it with coriander leaves and serve hot as a side dish with Roti (indian flat bread).

Gatta Nu Shaak / Kadhi (Gram-Flour Dumplings in Yogurt Sauce)


Ingredients:

1 C Besan / Channa flour
1/2 C Water
1 C Sour Yogurt
1 tsp Coriander powder
3/4 tsp Red Chilli powder
1/4 tsp Turmeric Powder
1/2 tsp Fennel Seeds (Sauf)
few pinches of Asafoetida
3 tsp Oil Canola /Olive
Salt & Sugar to taste
A Pinch of Citric Acid if yogurt is not sour.

For tempering:

2 tsp oil / Ghee
1/4 tsp Cumin Seeds
Few slitted, Dried Red Chilli
few pinches of Asafoetida

Method:

1. Mix besan while adding fennel seeds, 1/2 tsp salt, 1/2 tsp red chilly pwd,1/2 tsp. coriander powder and oil.
2. Make a stiff dough. Make 5-6 thin and long strips from this dough rolling between your palms
3. Put these strips in boiling water and cook for 5-7 minutes. Cut these gattas into small pieces.
4. Whisk curd & water now add, some salt, remaining red chilly powder,coriander pwd, turmeric powder, & citric acid. Mix well & bring it to boil.
5. Once the kadhi is boiling, add these gatta pieces. For tempering, heat oil, add jeera, dried slitted-red chilli. Pour this on he kadhi ( yogurt & water mixture).
6. Cook it for 5-7 minutes while stirring continuously. Put to simmer & cook for another 5-7 minutes. Serve hot with Roti / Rice.

Vagharelo Rotlo ( Millet Flour Flat Bread Strips in Yogurt Sauce) & An Award


Know What You Eat:


Millet: It ranks sixth most important grain in the world. This nutrition packed, mildly flavoured millet is highly nutritious, non-glutinous and like buckwheat and quinoa, is not an acid forming food so is soothing and easy to digest. In fact, it is considered to be one of the least allergenic and most digestible grains available and it is a warming grain so will help to heat the body in cold or rainy seasons and climates. Millet is tasty, with a mildly sweet, nut-like flavor and contains a myriad of beneficial nutrients. It is nearly 15% protein, contains high amounts of fiber, B-complex vitamins including niacin, thiamin, and riboflavin, the essential amino acid methionine, lecithin, and some vitamin E. It is particularly high in the minerals iron, magnesium, phosphorous, and potassium. Yes it is GLUTEN FREE.

Bajri Rotlo / Millet flour flat bread is one of my favourite Indian bread, as its very nutritious and one rotlo can be sufficient for a person eating 4-5 rotis...that saves time isnt it...lol....Not to forget Rotlo with Jaggery is a super high iron food for the anaemics. Many variations can be done using, millet, sorghum, corn, green moong flours, but to make it in a traditional way is a real challenge, (flatenning it between palms with a dough which lacks enough gluten "elasticity") and I was not
good at it..did tried it earlier, but the final product comes after playing around 10 - 15 mins..and thats a looottt of time for me to invest after making one flat bread...of course, I am talking about when I was "not good at it"..But my grandma passed a very good trick to make all of these in just a jiffy..The secret is add a bit of whole wheat flour, so you can actually roll it out with a rolling pin, and avoid frustrations in this hot summer standing in kitchen for hours with hot griddle..o0o00o..Thanks "Nani"(granny) that helped me very much. And Hey you know what...ever tried millet flour flat bread curry OR to be more precise.. Millet flour flat bread strips in yogurt sauce...sounds yummy, super-healthy, one meal dish, intersting ??? Try it you will definately like it. I usually make these bread in the morning, and cook it in the yogurt sauce in the evening...



How to make Bajri Na Rotla

Ingredients :

1 C Pearl Millet flour
1-2 Tbsp of Whole Wheat Flour ( do not add whole wheat flour if you desire a gluten free bread)
Ghee to spread over, once bread is done.
Water to knead dough
Salt to taste. (optional)

Method :

1. Sieve together flour and salt.,add a little water at a time, knead into a soft pliable dough,for atleast 2-3 minutes till it becomes smooth.
2. Take a pingpong ball sized lump of dough, form a ball and dust it in dry bajri (millet flour).
3. Roll one rotlo about 6 " in diameter on a rolling board, using adequate dry flour to dust as you roll.
4. Dust off excess dry flour & place it on warm iron / non-stick griddle.
5. Sprinkle a few drops water and brush to coat this bread evenly on the top, now flip and allow wetted side to cook till spots form.
6. Invert on direct gas flame, using tongs to hold & roast it evenly till brown spots appear.
7. Serve hot with any desired vegetable dish or dal, I like it with Jaggery.


"Vagharelo Rotlo" / Flat bread Curry (Mighty Millet flour flat bread strips in yogurt sauce)


Ingredients:

4 Rotlo (millet flour flat bread)
1-1/2 C Yogurt
2 tsp Besan ( Bengal gram flour)
Water to dilute
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp garam masala powder
1 tsp coriander-cumin (dhana-jeeru )powder
lemon juice acc. to taste
Sugar / Jaggery acc. to taste.
1 Tbsp Cilantro, Chopped.

For tempering:

1 Tbsp Olive / Canola Oil
1/2 tsp Mustard Seeds
1/2 tsp Cumin Seeds
2 Slit Green Chillies
Few Chopped Curry Leaves
1/4 tsp Hing (Asafoetida)

Method:

1. Mix yogurt and besan (gram )flour & add approximate of 1-1/2 Cups of water to dilute this mixture, whisk it without forming any lumps.
2. Heat oil in a wok, add mustard seeds, as it spluters, add cumin seeds, curry leaves, asafoetida, then pour above yogurt + besan mixture to it, while constantly stir it.
3. Bring it to boil, add the rest of the ingredients, stir it, and now with your fingers tear apart the flat bread you made into medium small pieces just like size of potato chips, and put it in this boiling yogurt sauce.
4. Once you add flat bread pieces into this sauce, stir it and put the flame off. Let it sit for a while, as these bread pieces will soak up all the sauce, leaving behind some gravy. Thats perfect consistency.
5. Its ready to serve hot, with some sprinkle of chopped cilantro.

Jain Sev Tameta Nu Shaak ( Sev Tomato Curry)


Know What You Eat: Antioxidant Benefits of Lycopene


In the area of food and phytonutrient research, nothing has been hotter in the last several years than studies on the lycopene in tomatoes. This carotenoid found in tomatoes (and everything made from them) has been extensively studied for its antioxidant and cancer-preventing properties. The antioxidant function of lycopene-its ability to help protect cells and other structures in the body from oxygen damage-has been linked in human research to the protection of DNA (our genetic material) inside of white blood cells. Prevention of heart disease has been shown to be another antioxidant role played by lycopene.


Preparation Time : 5 mins
Cooking Time : 15 mins.
Serves / Makes : 2


Ingredients:

4 C Chopped Tomatoes
1/2 C Sev (Bengal gram fried noodles) (Sev amount can be increased as per taste)
1/4 tsp turmeric pwd
1/2 tsp red chilli pwd
1/4 tsp garam masala
1 C water
Salt to taste

For tempering:

2 tsp Oil
1/2 Cumin / Mustard Seeds
A pinch asafoetida (hing)

Method:

1. Heat oil, as the cumin seeds spluters , add tomatoes, salt, turmeric pwd, red chilli pwd, garam masala pwd cook for a while.

2. Add water to cooked tomatoes, and bring it to boil..once it has started to boil, add sev and put the flame off.

3. Let is sit for a while, and serve with Bhakri / Roti (Indian flat bread)

Jain Pav-Bhaji / Bhaji Pav

Know what you eat: Jains beleive---Ananta-käyas are the plants which are inhabited, not like the majority of the vegetable kingdom by individual jivas (living beings), but by an infinite number of living organisms. Potatoes, onions, carrot, garlic, ginger, tuber and other root vegetables are included. Jain concept is based on a thorough insight into plant physiology and morphology as is shown by the recognition of the role of roots and stems is for future generations. I have used Cilantro in this recipe, which is not acceptable, on particular days, in that case one can use dried cilantro.
Recipe: Jain Pav Bhaji
 
Preparation time: 12 - 15 mins
Cooking time : 15-20 mins
Serves: 4

Here is the Saatvik way of making a Pav -Bhaji:

Ingredients

  • 4 med sized raw plantains/cooking banana, peeled and cut into 2- 3 pieces
  • 1 C Cauliflower florets
  • 1 C Chopped Green Bell Pepper
  • 2 C Crushed Tomatoes / Chopped tomatoes work as well
  • 1/2 C Boiled Green Peas / Frozen - thawed
  • 2 tsp Butter + 1 tsp Canola Oil
  • 1/2 tsp Cumin Seeds
  • 2- 1/2 tsp Pav Bhaji Masala ( Any Brand, I used Badshah)
  • 1 tsp Red Chilli Powder
  • Salt to taste

Garnishing

1 Tbsp Chopped Cilantro / Coriander leaves
1 tsp Lemon juice
1/2 tsp Butter

Method

  • Pressure Cook Plantain peeled & cut in 2-3 pieces + Cauliflower with some water, for about, 2 - 3 whistles.
  • Mash it with a masher, and keep it aside.
  • Heat Butter + Canola oil, and temper "Jeera" Cumin seeds, once it starts splutering, add chopped bell-peppers, & cook for a while.
  • Now add chrushed tomatoes, green peas, red chilli pwd, pav-bhaji masala, salt & add already kept mashed cooked plantain + cauliflower.
  • Mix everything together, cook for a while.
  • Add lemon juice, chopped- cilantro, some butter and serve hot with regular / masala pav (Sour-dough Bread goes very well with this recipe)

For Masala Pav

1. In a bowl add 1 tsp butter with 1 pinch of chaat masala + pav-bhaji masala + black salt with some chopped cilantro & mix it well.
2. Now with a butter knife / spoon apply this on the Pav (bread) of your choice.
3. Serve hot with Bhaji & Popaddum (papad)

Other variations in Pav Bhaji

• Jain pav bhaji — pav bhaji without potatoes, onion and garlic
• Khada pav bhaji — cook the same way but don't mash the vegetables
. Peas pav bhaji -- Add fresh / dried soaked overnight green peas with tomatoes, and no more vegetables
• Paneer pav bhaji — regular pav bhaji garnished with loads of paneer
• Cheese pav bhaji — regular pav bhaji garnished with cheese
