Laapsi (Traditional Sweet Porridge)
Know What You Eat: Broken wheat carries a great deal of nutrition and fiber since it includes the fiber and nutrient rich outer bran and germ of the wheat.
Cooking Time - 30 min
Preparation Time - 5-10 min
Serves - 4
1 cup Broken Wheat(Dalia) (broken wheat is diff. than cracked wheat which cooks faster)
1 Tsp Ghee (Clarified Butter)
1/2 tsp Elaichi Powder
1/2 tsp Nutmeg Powder
1-1/2 cup Jaggery
Saffron - few strands
3 cups Water / Milk OR as required .
1 Tbsp Sliced Almonds
1) In a heavy bottom saucepan take 1 Tbsp Ghee & roast Cracked wheat till it is slightly roasted and you get a good aroma.
2) Add water and Saffron strands and let the broken wheat completely get cooked.
3) Now add jaggery to the cooked Broken wheat and keep stirring till it leaves the sides.
4) Now add elaichi powder and the toasted nuts/ sliced almonds.
Note: The whole process can also be pressure cooked to save some time & energy, mix everything together with 3-4 whistle on medium heat.
