Indothai Whole Wheat Noodles & A Creative Blogger Award

Know What You Eat : Super Easy but Nutritious recipe.

Water Chestnuts: This food is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Dietary Fiber, Riboflavin, Vitamin B6, Potassium, Copper and Manganese.
Baby Corn is a good source of folate and vitamin B.
Broccoli & Spinach: Low calorie, anti-cancer, high iron & tocopherol food.
Whole Wheat Spaghetti, each 2 oz. serving packs a whopping 5 grams of fiber and 7 grams of protein! Initially, I would always wanted pasta, noodles in the traditional variety and taste... Of course the nutritional value means nothing to me if it’s not something I enjoy eating...well I try to make it more intersting taking it as a challenge for my taste buds..Try it, absolutely mouthwatering. Plus its high in selenium, dietary fiber, low in sodium.

Notes: The spaghetti was fairly dry with this amount of butter / olive oil but the taste was very good. If you can stand the calories, by all means add more !

Ingredients:

1/2 box of Heartland Whole Wheat Thin Spaghetti
1 C Spinach, Chopped
1/2 C Brocolli, Chopped
1 C Cabbage, Shredded
1/2 C Sprouts
1/2 or 2/12Ounce C Water Chestnuts, Chopped
1/4th Cup Baby Corn, ( I did not used )
3 Tbsp of Roated Peanuts, Coarsely grinded
2-3 pinches of Black Pepper powder
1 tsp of Soya Sauce
1 tsp of Lemon juice
1 Tbsp Cilantro, Chopped
1/2 tsp of red-chilli flakes / sauce ( add if you desired more spicy )
1 Tbsp of Olive / butter
Salt to taste
1/2 tsp of brown sugar / jaggery
Water to cook spaghetti

Method:

1. Cook spaghetti, according to the instructions given on the box. Set Aside.
2. In a big wok, heat oil, add all the ingredients except lemon juice & cilantro (coriander), and stir/ mix nicely.
3. Cook for a while on high heat, as you dont want the veggies to be completely cooked, should remain crunchy.
4. Now add lemon juice & chopped cilantro, remove from flame and serve hot.

Regarding the 7 things that we both like to do is:

1. Sadhana's favorite color is pistachio green , Muskaan's favorite color is blue
2. Both of us love fruits and can survive on them alone.
3. We both try to cook with bare minimum processed food and do things from scratch.
4. We both try to cook as healthy as possible, with food low on carb, refined sugars and not too fatty, and are open to try any vegetarian recipes which is super healthy and has minimum process to cook.
5. We both believe in Ayurveda and home remedies. Also use them on day to day basis.
6. We both love nature, wish we could atleast have a cow to have freshest milk & and an agricultural land to grow our own fruits & veggies with no or minimal harmful products, thus helping environment and our mother earth.
7. We both are true believer in GOD, and Karmas & we have faith & patience to get through any hurdles in lives.
8. One more last thing which came to my mind, since we are bragging of ourselves for a while now...usually never did all this while as our ears and mouth are not use to hear too much of it...but we definately want to use this oppurtunity to Salute & Thank each other as both of us bought this blog so far, without one it was not possible. Cabbage-Celery Soup

Know what you Eat - Cabbage belongs to the family of cruciferous vegetables, which includes, kale, broccoli, collards, Brussels sprouts, cauliflower and kohlrabi. Cabbage is a rich source of vitamin C, of fiber, of iron, calcium, sium. The odor that it emits comes from the sulphur content of cabbage which helps the body to resist bacteria and protects the protoplasm of the cells. It is said to aid in producing glossy hair. Celery is high in Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Folate, Potassium, Manganese, Riboflavin, Vitamin B6, Pantothenic Acid, Calcium and Magnesium.



Cabbage is a vegetable which i like to stock up, it is very healthy and versatile and the whole one can stay fresh for couple of days. It goes into stir fry, cole slaw, upma, curry, kootu and what ever was the balance went into this soup. But when sauting cabbage, the odor from the sulphur is not very inviting and i decided to use celery to counter the pungent smell and the soup came out really well. That too with the addition of coconut milk it was really tasty, creamy and kid certified.

Preparation time: 10 mins
Cooking time: 25 mins
Serves : 4


Ingredients:

Cabbage- 4 cups(finely chopped)
Celery - 1 1/2 cups(Chopped)
Coconut Milk - 1 can (120z)
Mint - handful
Ginger - 1 inch piece
Salt to taste
Pepper to taste
Water
Oil - 2 tsp(i used coconut oil)

Method

1) Wash, rinse, drain and chop cabbage.
2) Wash the celery and chop into fine pieces.
3) Heat a pan, add 1 tsp of oil and then add the chopped cabbage and celery pieces.
4) Saute till they are tender.
5) Let this cool and then transfer to a food processor and puree it adding little water.
6) Now peel the ginger and cut into thin strips.(Always peel the ginger and use the inner part alone).
7) Heat 1 tsp of oil and once hot add the mint leaves and ginger strips and fry till you get a nice aroma.
8) Now add the pureed cabbage and celery mixture, coconut milk and water to the desired thickness and let this simmer for 10 minutes.
9) Add salt and pepper to taste and serve it hot with your favorite bread.

Spinach Celery Soup in Coconut Milk


Know What You Eat: Spinach is an excellent source of vitamin A (70 percent of daily requirement), vitamin C (25 percent of daily requirement) and iron (20 percent of daily requirement). Spinach also provides vitamin K, which helps blood coagulate and which, along with calcium, vitamin D and phosphorous, is important for strong bones. Celery is a plant in the parsley family with edible roots, research has shown that celery contains blood pressure reducing properties. Celery contains active compounds called Pthalides which relax the muscles of the arteries that regulate blood pressure allowing these vessels to dilate. It is rich source of Vitamin C.

I hate to do shopping(grocery ) that too to stand in the line to pay for the items purchased when people come in with a big bunch of coupons to be sorted out, all the sorting is done at the cash counter making people wait. To get over it, i quickly graze through the magazines(especially the food related ones) kept near the billing counter. The bad part it sometimes you will be half done and your turn would have come. This is one of the recipe i came across but couldn't go through the whole recipe except the title, so i made my own by adding celery as i just love its flavor and it did turn out nice.

Preparation time: 10 mins

Mix Vegetable in Coconut Gravy Indo -Thai fusion


Know what you eat:

Thai cusine is one of the healthiest food you can eat. Of course, it's already known that many of the fresh herbs and spices used in Thai cooking - such as

Turmeric anti-inflammatory / anti-oxidant agent
Coriander gastrointestinal trouble including gas and bloating, digestive problems bacterial and fungal infections loss of appetite.
Coconut milk (lowers bad cholesterol (LDL), while promoting good cholesterol, boosts immunity, modulates metabolic functions, provides valuable fatty acids which most people in the West are lacking, fights aging. last but not least...
Fresh chillies - have immune-boosting and disease-fighting power also help maintain consistent insulin and glucose levels.

Ingredients:

3 C Mix Vegetable ( I used carrot, cauliflower,green beans,yellow corn,
400 ml Coconut milk
1 Tbsp Chopped Coriander
2 slit green chilli
2 tsp garam masala
3 tsp any brand veg kadai mix (U will find it in Indian Grocery Store)
1 tsp Sambal Olek/ Olak (REd-Chilli + vinegar)
3 tsp roasted chopped peanuts
1/2 tsp cardamom powder
1/2 tsp turmeric powder
1 tsp sugar
Salt to taste

For Tempering:
3 tsp Canola Oil
1 tsp cumin seeds
1/4 tsp asafoetida pwd
few curry leaves

Method:

1. Microwave / boil all the vegetable in some water untill they are 90% cooked. Do not throw the water, you can use this vegetable stock, in a gravy,soup,or next time when you make a dough for rotis.
2. Heat oil in a kadhai/skillet, then mustard seeds, once it stops spluttering add cumin,split green chilli, asafoetida powder & curry leaves.
3. Now add all the semi cooked vegetables, turmeric pwd,veg kadai mix, chopped peanuts, cardamom pwd,garam masala, sugar and salt to taste.
4. Let is simmer for a while till you see the gravy becomes little thick. Stir it when required, too much stirring will make these veggies mushy.
5. Served Hot.

Note: Best served with Basmati Rice / Indian Flat Bread (rotis, parathas)
