Know what you Eat: Mung beans(green bean) are a good source of protein, dietary fiber, thiamin, iron, magnesium, phosphorus, potassium ,copper, and folate.

Serves: 3 to 4
Sprouted Mung(Green) Beans - 1 cup
Chopped Tomato - 1 cup
Choppped Green Pepper - 1/2 cup
Chopped Red Pepper - 1/2 cup
Chopped Scallion - 1/2 cup
Lemon Juice - 1 tsp or to taste
Salt - 1 tsp or to taste
Powdered black pepper - 1/2 tsp or to taste
Chopped Cilantro - 1 tsp
1) Combine sprouted mung bean, chopped tomatoes, green and red pepper, scallion.
2) Add lemon juice, salt and pepper to the above and toss gently.
3) Garnish with chopped cilantro and serve.
