How to Pickle Jalapeno Pepper - Reader's Favorite

Respiratory Problems: Jalapeno Peppers to the rescue !
Millions of Americans suffer from respiratory problems such as chest congestion, bronchitis, and asthma. Unfortunately, neither over-the-counter nor prescription medications have proven to be 100 percent effective and free of dangerous side effects. Jalapeño peppers are rarely mentioned when discussing all natural, effective expectorants. Why? Few Americans cook with them and "Americanized" Mexican cuisine is often skimpy in the inclusion of jalapeño peppers or lacks them altogether. However, they have brought relief for many sufferers of respiratory problems. Capsaicin, the substance that makes peppers hot, is found in varying amounts depending on the pepper in question. Cayenne is also good in asthmatical asphyxia". Asphyxia refers to one's inability to get his breath. Some say that jalapeño peppers are 10 times hotter than red pepper (cayenne), others believe that number is higher. The important fact is that the consumption of jalapeño peppers has proven to be extremely beneficial in achieving easier breathing. Capasaicin as mentioned earlier, is also the name of the thermogenic supplement in many weight loss pills. Guess what? That's the same chemical. Peppers are actually great for weight loss. Granted, if the pepper is stuffed with cheese and fried, the great nutritional value in the sliver of jalapeno is probably lost for good.

How does Capsaicin help you lose weight?
As I mentioned, Capsaicin is a thermogenic, meaning that it heats up your body by consuming energy. Where does you body get this energy? From fat. Capsaicin helps give your overall metabolism a boost, but unlike previously marketed stimulants (like the FDA squashed herb ephedra), Capsaicin is good for you heart and doesn't cause a high heart rate. In fact, it lowers cholesterol. Right now enjoy this pickling process at home from scratch....
Pickling Jalapeno

For homemade pickled Jalapenos you need
  • A pair of vinyl / kitchen glovesA glass jar/bottle, which is sanitized by soaking the jar in hot boiling water for about 10 mins then and thoroughly dried with paper towel or clean kitchen cloth... this is the best preservation technique along with vinegar & salt.
  • 4 C  Fresh Jalapeno, washed dried & sliced
  • 1 C Distilled White Vinegar 5% (In a day or 2 all the jalapeños will be submerged in this vinegar)
  • 3 Tbsp Pickling salt


Method


  • Keep the glass jar ready using above method..
  • Do not forget to wear gloves before you touch this spicy peppers..mean it..they are real spicy..Make sure to wash these peppers, dry it with kitchen towel, remove the pod, and slice it. 
  • Fill Jar with pieces of peppers and pickling solution, leaving 1/2 inch head space.It stays good for almost more than a year..Enjoy these peppers after 20 days of pickling process.
Please Note
  • Select fresh, firm fruits or vegetables free of spoilage. Measure or weigh amounts carefully, because the proportion of fresh food to other ingredients will affect flavor and, in many instances, safety.
  • Use canning or pickling salt. Noncaking material added to other salts may make the brine cloudy. Since flake salt varies in density, it is not recommended for making pickled and fermented foods. White distilled and cider vinegars of 5 percent acidity (50 grain) are recommended. White vinegar is usually preferred when light color is desirable.

I am not sure if we get pickling salt in india, can i use whole salt or the regular one? Pls suggest a subsitute
