Fruit & Nut Whole Wheat Cookie

Couldnt be much Innovative as it ringed at the end hour of the event..Just for the first time sending my best shot to - Monthly Food Photography @ Jugalbandi



Recipe: Tried & Tasted / Inspired by Ramya of Mane Adige & made cookies with some variations. Ramya I tried & tasted ---> Results = "Stupendofantabulouslyfantastic"

Prep time: 10- 15 mins
Cooking time: 10 - 12 mins
Yields: About 20-25 cookies

Ingredients:

1-1/2 C Whole Wheat Pastry Flour (used WWPFlour instead of only all purpose)
1/2 C All Purpose flour
3/4 Brown Sugar
1/2 cup Butter at room temperature
1 tsp Baking powder
1 tsp Mix Fruit Essence (instead of vanilla essence)
3 tbsp Cooking oil
1 Tbsp Milk (only if needed)
3/4 cup Chopped nuts ( I used- cranberry,walnut,pistachios,almonds)

Method:

1. Only if you are fast in assembling this cookie dough.....Pre-heat oven to 350 deg F. Otherwise wait till you are half way done.

2. In a large bowl, cream the butter and sugar until fluffy - approx. 2 minutes. If you are using electric mixer, set the speed to medium.

3. Seive & Slowly add the flour, baking powder, mix-fruit essence, oil,& mix it gently until combined keeping in mind you do not have to mix like a cake batter.

4. At this point if the batter is too dry, add couple of spoons of milk.

5. Add nuts, mix gently with a wooden spoon. Adjust the quantity of nuts according to your wish.

6. Pre-heat the oven now, Meanwhile, on ungreased cookie sheet drop cookie-dough into rounded teaspoonfulls, spaced 2 inches apart.

7. Bake for 8-10 mins or until the cookies are completely done.

8. Remove from oven and let cool completely. Serve with milk or as is and enjoy!

What is Whole Wheat Pastry Flour ? Can I substitute regular wheat flour?
