Fresh Turmeric No Oil Pickle

Know what you eat: Indian Saffron, Yellow Ginger (Curcuma Zanga)

The rhizome, or root of turmeric, is bright orange but otherwise has the skin and shape of its relative, ginger. Turmeric is boiled, peeled, dried, and ground into a powder. This powder is an essential ingredient in Indian cuisine.

Once you start using turmeric on a regular basis, it's fun to find new ways to use it in recipes. My favorite way to use it is to add a pinch of it to potato salad. It adds a nice flavor and gives the potato salad a rich yellow hue.


Contraindications:
Turmeric should not be used by people with gallstones or bile obstruction. Though turmeric is often used by pregnant women, it is important to consult with a doctor before doing so as turmeric can be a uterine stimulant.



Vegan Turmeric Pickle


For Fresh Turmeric Pickle you need:

1 C Fresh Turmeric ( I bought it from Indian Grocery Store, you will find it near they keep ginger & other root vegetables)

1/2 C Juice of 3-4 Large sized Lemon
1 tsp Salt

Method:


1.  Wash & paper dry fresh turmeric, just like we wash ginger, Peel & dice thinly.

2.  In a jar, add these diced turmeric, salt & lemon juice..Its ready to eat..but it will taste the best after 3- 4 days of pickling. Serve it with Roti & Curry of your choice.


Note: Ginger can also be added along with turmeric.

Lovely pickle and picture. I have made using a mix of mango ginger and fresh turmeric few years ago. I don't get these here!

Used to throw away the turmeric root after Sankaranthi or use it for bath..Never imagined pickling it.. Sure must taste great!!

great information on turmeric...it is such a useful herb and we should use the fresh tuber whenever available.
i have grown it in my garden and even the leaves are so fragrant n medicinal...this pickle is very simple n yummy, we add ginger slices too which turns pink and make it colorful...

Since turmeric is full of medicinal value, my Mom used to incorporate fresh turmeric in to her dishes... I don't find this in the Indian store in my area though... looks too good :-)

thanks so much .... one of my close friend's mum used to make this pickle ... hd brought the turmeric root (also known as yellow ginger) to make this pickle .... but hd doubts as to whether m doing it right .... ur recipe showed me that what i was thinking was absolutely correct ... i just added 2-3 green chillies to spice it up ;) .... thanx again
