Mix Vegetable in Coconut Gravy Indo -Thai fusion


Know what you eat:

Thai cusine is one of the healthiest food you can eat. Of course, it's already known that many of the fresh herbs and spices used in Thai cooking - such as

Turmeric anti-inflammatory / anti-oxidant agent
Coriander gastrointestinal trouble including gas and bloating, digestive problems bacterial and fungal infections loss of appetite.
Coconut milk (lowers bad cholesterol (LDL), while promoting good cholesterol, boosts immunity, modulates metabolic functions, provides valuable fatty acids which most people in the West are lacking, fights aging. last but not least...
Fresh chillies - have immune-boosting and disease-fighting power also help maintain consistent insulin and glucose levels.

Ingredients:

3 C Mix Vegetable ( I used carrot, cauliflower,green beans,yellow corn,
400 ml Coconut milk
1 Tbsp Chopped Coriander
2 slit green chilli
2 tsp garam masala
3 tsp any brand veg kadai mix (U will find it in Indian Grocery Store)
1 tsp Sambal Olek/ Olak (REd-Chilli + vinegar)
3 tsp roasted chopped peanuts
1/2 tsp cardamom powder
1/2 tsp turmeric powder
1 tsp sugar
Salt to taste

For Tempering:
3 tsp Canola Oil
1 tsp cumin seeds
1/4 tsp asafoetida pwd
few curry leaves

Method:

1. Microwave / boil all the vegetable in some water untill they are 90% cooked. Do not throw the water, you can use this vegetable stock, in a gravy,soup,or next time when you make a dough for rotis.
2. Heat oil in a kadhai/skillet, then mustard seeds, once it stops spluttering add cumin,split green chilli, asafoetida powder & curry leaves.
3. Now add all the semi cooked vegetables, turmeric pwd,veg kadai mix, chopped peanuts, cardamom pwd,garam masala, sugar and salt to taste.
4. Let is simmer for a while till you see the gravy becomes little thick. Stir it when required, too much stirring will make these veggies mushy.
5. Served Hot.

Note: Best served with Basmati Rice / Indian Flat Bread (rotis, parathas)

Super Quick & Healthy Mix Vegetable Stir Fry

No "one a day", switch to a healthy treat everyday.


Know What You Eat:

Nutritionally, water chestnuts are a good source of potassium and fiber, low in sodium, and fat is virtually non-existent but is high in carbohydrates, one can easily replace them with low carb bamboo shoots.
Carrots: good source of Vitamin C, Vitamin B6, Folate, Pantothenic Acid, Iron, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin K and Manganese.
Green /Red Pepper: This diet-friendly treat has no fat, cholesterol or sodium and is excellent source of vit Cvery few carbohydrates.
Zucchini: A favored jewel of the summer is good source of Thiamin, Niacin and Pantothenic Acid, very good source of Dietary Fiber, Protein, Vitamin A, C,B6, Folate, Iron, Magnesium, Phosphorus, Potassium, Zinc, Copper and Manganese.
Preparation Time : 10 mins
Cooking Time : 6-8 mins
Serves : 3

Ingredients:

1/2 C Diced Paneer / Tofu
4 C Mix Vegetables (Carrot,Brocolli,Zucchini,Cauliflower, Water Chestnuts,Bell peppers, Yellow Corn,Baby Corn) Washed & Diced in similar pieces.

For Seasoning:

1 Tbsp (EVOO) Olive Oil
3 tsp Sesame Seeds
1 tsp Dried Coriander Pwd
1 tsp Turmeric Pwd (optional)
3 tsp Taco Seasoning Mix
1 tsp red chilli flakes (optional)
Salt to taste

Method:

1. Heat oil in large non- stick skillet / kadhai.
2. Add all the vegetables, now add sesame seeds & toss it well, then add all the seasonings except salt. Put the flame on high and cook it for 5 - 6 mins for that crunch needed in this recipe, you can cook more if desired.
3. Add salt.
4. Mix it very well. Serve Hot. I would just eat them alone.....Works great as a side dish with Plain Rice / Indian flat bread / or with any other main course.

Mixed Vegetable with Mung Beans & Spices (Gothsu)

Know what you Eat : Want to color your life healthy? Brightly colored vegetables, whether green, red, orange or yellow, are rich sources of some of the best nutrients available. These antioxidants work together to effectively neutralize free radicals, which can travel through the body causing huge amounts of damage to cells. Free radicals are major players in the build up of cholesterol in the arteries.

Gothsu is an authentic side South Indian dish prepared with vegetables, cooked lentils and spice.

Preparation Time : 15 mins
Cooking Time : 20 mins
Serves : 4

 Ingredients

Carrot - 1
Onion (medium) - 1
Potato (small) - 1
Beans - handful
Bell Pepper(Red,Green, Yellow) - 1
Ginger - 1 inch piece
Curry leaves - few
Green Chilly - 2 or to taste
Oil - 1 tsp
Mustard Seeds - 1/2 tsp
Channa Dal - 1/2 tsp
Asafoetida - small piece
Tamarind - goose berry size ball
Turmeric powder - 1 tsp
Moong Dal - 1/2 cup
Salt to taste.

Garnishing

Chopped cilantro - 2 tbsp

Method

1) Soak tamarind in water.
2) Cook the moong dal and keep it ready.
3) Heat the oil add mustard seeds.
4) After they splutter completely add asafoetida, channa dal, after the dal browns add curry leaves, ginger pieces, green chilli and onion.
5) Once the onion changes color add the chopped carrot, egg plant, beans, bell pepper and potato pieces.
6) Add turmeric powder, salt and sauté till the vegetables are well cooked.
7) Once the vegetables are cooked squeeze out the tamarind pulp and add it along with enough water to the vegetables.
8) Boil it for 5 minutes and add the mashed mooing dal and simmer it for a minute or two and switch off.
9) Garnish with chopped cilantro.
10) This can be served with Idly, Pongal or Dosa.
