Post, not to post, post, not to post ? This was the question haunting me before i composed this post. Last couple of weeks - last few months life has become too hectic. Me getting back to work after a break of two years and catching up on the latest changes, polishing and dusting my skills. The kids, their school, after school activities, anniversary celebration of their cultural activities, doing an extensive chauffer’s job in dropping and picking up for all these things and to top it all sickness, hospitalization, follow up Doctor visits and all the trauma and mental agony associated with it. I literally stopped blogging or commenting on any of the blogs.
Few months back, my first thing after logging on to my system was blog hopping and leaving comments. But past few weeks, running like a headless chicken i couldn’t do any of my favorite things.
To top it all , one thing which I haven’t given up is our dietary habit, i am still sticking on to our same healthy, no pre processed, no canned, packaged food and in fact moving on to a gluten free diet. With this kind of diet plan to follow, it is really time consuming and i couldn’t take any photo graphs of any of my dishes.
The one i am posting today and the like of them all are sitting in my system for a long time. These are things which i had prepared for schools, parties etc and which don’t come under our dietary guidelines. Something
which i don’t advocate and i don’t follow, so thought will not post. But people around me, my friends who all check this website periodically, whenever i meet ask me have you quit blogging. So to break this i thought i will Finally Post this one even though i am not fully convinced in doing the following
All Purpose Flour – 1 1/2 Cup
Sugar – 3/4 Cup
Yogurt – 1/2 Cup
Water – 1/2 Cup
Oil – 1/3 Cup
Ener-G Egg Replacer – 1 1/2 tsp
Warm Water – 1 Tbsp
Aluminium Free Baking Powder – 1 Tsp
Baking Soda – 1/2 Tsp
Vanilla Extract – 1 Tsp
Apple Cider Vinegar – 1 Tbsp
Icing
Butter 1 Stick
Confectioners Sugar – 1/2 cup
Clear Vanilla Extract – 1 tsp
Method
1) In a bowl beat the Ener-g Egg Replacer with warm water till it is dissolved and well combined.
2) Now add the sugar, yogurt, water, oil, vanilla extract and stir till it is well combined.
3) Preheat oven to 350 degrees F.
4) Grease a mini cup cake mould or line them with baking cups.
5) Combine the flour, baking soda, baking powder etc and add it to the wet mixture and combine
without over mixing.
6) Add the apple cider vinegar and mix evenly and now spoon them into the cup cake mould.
7) Spoon upto 3/4 th of the mould and you will get around 24 + 4 mini cup cakes.
8) Bake till a tooth pick inserted comes clean.
9) Cool in a wire rack and i did the icing the next day.
10) For the icing beat the butter, sugar and vanilla extract till the icing becomes stiff.
11) Pipe it onto the cup cakes and decorate as per your wish.
